石井友理・生命環境学部助教が、2025年7月13日から7月18日にかけ、米国・ニューハンプシャー州ウォータービルバレイで開催されたGordon Research Conference (GRC)・The Role of Polyamines in Health and Disearseにおいて、「From Sake to Camembert: How Fungi Contribute to Polyamine Production in Fermented Foods」をテーマに発表を行いました。Gordon Research Conferenceは、最先端の未発表研究を紹介し、活発な議論と交流を重視する国際会議です。5日間にわたって、あらゆるキャリア段階の研究者が一堂に集い、共同研究や情報共有、ネットワークの構築が促進されます。プログラムには世界中からの講演やポスター発表が含まれており、共同の食事や自由時間を通じた交流の機会も設けられました。15カ国以上の国から130名もの研究者が集まり発表・討議が行われました。疾患と健康長寿に関する発表が多く行われ、微生物分野の中では、腸内細菌叢が免疫力、認知能力に関与する最新の知見や発酵食品の優位性を示す発表もありました。

Gordon Research Conference (GRC)・The Role of Polyamines in Health and Disease is a leading international conference showcasing cutting-edge, unpublished research, with ample time for discussion and informal interaction from 15 countries with 130 attendees gatherd to give presentations and hold discussions. Many presentations focused on disease and healthy longevity, highlighting recent findings on the role of the gut microbiota-currently a topic of great interest-in regulating immune function and cognitive ability. Several talks also demonstrated the advantages of fermented foods and the importance of microbes contribute to fermentation processes. During 5 days, it brings together scientists at all career stages to foster collaboration and community. The program features global speakers, poster sessions, and networking opportunities through shared meals and free time in a place that is surrounded by beautiful nature.
